Winter Solstice Immunity Soup
Tomorrow is the Winter Solstice, and I want to share with you this immunity boosting soup that will be sure to light you up and warm you up this Winter. This soup is packed with variety of mushrooms which are great immune booster and packed with nutrients. I will provide you with the ingredients and instructions but if there’s one thing I love about soups is that you truly awaken the ancestral Spirits buy cooking it. You get to play with what you add and how you season it! Let the spirit of the plants and your ancestors guide you!
INGREDIENTS:
White Onion
Garlic
Ginger (this could be fresh or dried)
Turmeric (this could be fresh or dried)
Green Bell Pepper
Celery
Carrots
Varieties of Medicinal Mushrooms
Lion’s Mane
Shiitake
White
Varieties of Medicinal Herbs
Cat’s Claw
Miso Broth or paste
Sweet Potatoes
Veggie Broth and Water
DIRECTIONS
In large pot, sauté garlic, onions, celery, and bell peppers in olive oil. Once all are soft and garlic fragrant add water, veggie stock or miso broth and paste.
Add the sweet potatoes, carrots, medicinal mushrooms, ginger, and medicinal herbs. Wait for all to simmer until it reaches the consistency you desire.
Although this recipe is vegan and very rich as it is you can easily add any protein of your choice. This is were the Spirit of the plants and your ancestors will guide and where you can put your unique touches and what you feel your soul and your family needs. Adding salt, pepper, garnishing herbs such as cilantro are all options that you can play around with.
